Be Back Soon

Hey everyone, just wanted to let you guys know that I am going on a 2 month vacation to Central America. yeah, that is right I will be backpacking for two whole months! I've been planning this trip for a long, long time and I am excited. Of course I am also very nervous, because I will miss my home, my family and my wonderful boyfriend, but I'm sure it will be a great experience.

It is obvious how much I'll miss baking and blogging about it, but I'll be back before you know it!

Wish me luck.

Caramel Brownie Cake

Ok so tomorrow is thanksgiving dinner.

You may be thinking, why is she celebrating thanksgiving? It is true I was born and raised in Israel, but my dad was born in raised in Lincoln, Nebraska. So every year he demands a traditional thanksgiving meal - turkey (of course with stuffing), eggnog, cranberry sauce and pumpkin pie.

I am in charge of the thanksgiving rolls and the dessert. I always make pumpkin pie, but to be honest it is not my favorite (sorry!), so this year I decided to make another dessert as well.

I combined caramel with a brownie and baked it as a cake.

It turned out divine.

The cake is delicious at room temperature, but if you eat it warm and gooey it is just heaven. I love the caramel flavor mixed with the fudgy brownie texture! yummy.

Tomorrow everyone will be satisfied. and stuffed.

Chocolate Chip Cookie Cupcakes

I haven't made cupcakes in so long, I almost forgot how delicious and fun they are.

These cupcakes are awesome because it is a cupcake and a cookie, baked as one! The end result is a chewy cookie, with a moist cupcake, topped with a dark chocolate frosting.

Sounds amazing right?

Well it really, really is as good as it sounds.

Cook's Illustrated Perfect Chocolate Chip Cookies

Can anyone ever get enough chocolate chip cookies? probably not. The only problem is there always seems to be another revolutionary recipe to try! I can never resist after reading basically scientific facts on why this recipe is the best (seriously, go here and you'll see what I mean). I actually made this recipe a while back, but never posted it. My last batch came out sort of flat, not on taste, but literally flat. This time I actually weighed my flour like cook's Illustrated suggests, and voila! I Got a beautiful cookie with bulk - just as I like it. I may be a weighing convert now.

I love browned butter, so this recipe is obviously a huge success. I made two batches just to keep up with how quickly the cookies were disappearing! I did alter the recipe slightly - mainly by chilling the dough overnight. I find it helps the cookies flavor plus they don't spread as much in the oven.

I have defiantly placed these cookies in my top favorites. Try the recipe, and tell me if you think it is in fact the perfect chocolate chip cookie.
