Brown Sugar Cornmeal Muffins
wow I have not posted in a while, but thankfully I have a good one for you. There is nothing better than a recipe that takes 10 minutes to put together, and tastes amazing. These muffins are so yummy! Even my sister, who is extremely picky, has admitted they are good. The recipe is from foodista.com and apparently it has Won a third place ribbon in the New Mexico State Fair in the cornbread muffins category (I would have loved to taste first and second winners mmmm...). It has a hint of cornbread taste but its very much its own thing - The brown sugar took care of that. I really like the crunchy topping for the muffins, because its work well with the soft bottom. The muffins are best eaten the day they were baked. I highly recommend this recipe!
Brown Sugar Cornmeal Muffins Recipe:
Muffin Mixture:
1 ½ cups all purpose flour
½ cup cornmeal
¾ cup firmly packed brown sugar
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter, melted
8 ounces carton plain yogurt
1 teaspoon vanilla
2 eggs
Topping:
2 tablespoons firmly packed brown sugar
1 tablespoon cornmeal
Step 1
Preheat oven to 400 F. Grease twelve 3-by-1-1/2 inch muffin cups.
Step 2
In a large bowl stir together flour, cornmeal, brown sugar, baking powder, baking soda and salt.
Step 3
In another medium bowl beat together butter, yogurt, vanilla and eggs.
Step 4
Add butter mixture to flour mixture and mix lightly. Spoon mixture evenly into prepared muffin cups.
Step 5
In a small bowl mix together all topping ingredients and sprinkle on top of each muffin before baking.
Step 6
Bake for 15- 20 minutes, or until a cake tester inserted in center of one muffin comes out clean.
