The Ultimate Brownie (aka the fudgy brownie)


I know my last post was a brownie as well, but I couldn't help myself, I've got brownie fever. I also used my friend's birthday as an excuse to bake another batch of brownies (she didn't complain!). Anyway, I think I've made myself clear when I said that fudgy brownies are my favorite. But I have something even better. *drum roll please* A fudgy brownie with a crackly shiny top! Am I right?

 

The ingredients are very simple, but putting the brownies together is the secret. The recipe says to beat the eggs and sugar at high speed for almost 10 minutes (thank god for the stand mixer). I am pretty sure that this is the reason for the wonderful brownie top, which creates a great contrast from the soft bottom. If you are a fan of the fudge you must try this recipe!


The Ultimate Brownie Recipe

250 grams (almost 9 ounce) bittersweet chocolate
1 cup butter
4 eggs
2 cups sugar
1 tablespoon vanilla
1 cup flour
1 teaspoon salt

Preheat oven to 325 degrees F. Grease a 9 x 13 pan.
Melt chocolate and butter in a saucepan over low heat; set aside. In a stand mixer, beat eggs, sugar and vanilla at high speed for about 7 - 8 minutes, until mixture is light. Fold in the cooled chocolate mixture. Fold in the flour and salt until just combined. Pour into prepared pan.
Bake for 25 - 30 minutes or until the top has hardened, and toothpick inserted comes out with moist crumbs (Don't over bake.) Cool and frost if desired, but that is not necessary.
