The dessert I made has been very popular among food blogs, and I thought it was perfect for purim. I mean, it is basically an oreo dressed up as a chocolate chip cookie. It took people a while to get the connection (I thought it was obvious hehe), but the cookies were devoured. I don't know who came up with the outrageous idea of stuffing an oreo inside a cookie, but he/she is brilliant!
The only problem I had was the cookie spreading WAY too much. That didn't seem to happen to other people, so I'm not sure what happened. Maybe I put too much batter around the oreo? But no worries I fixed the problem by using a large cookie cutter.
If the cookie spreads for you too, this is what I did:
while the cookies are still warm and soft, place the cookie cutter exactly around the oreo.
After the cookies have cooled remove the edges. DON'T throw them out, they are still delicious to snack on!
and there you have it, a perfectly round oreo stuffed chocolate chip cookie. Enjoy!
Oreo Stuffed Chocolate Chip Cookies

2 sticks (1 cup) softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon pure vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 pkg. Oreo cookies

Preheat oven to 350 degrees. Cream butter and sugars together with a mixer until well combined. Beat in eggs and vanilla.
In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
Makes about 2 dozen large cookies.
