Fat & Fluffy Snickerdoodles

This has got to be the best snickerdoodle I have ever eaten. I love fat cookies, and these cookies are no exception! If you have never made snickerdoodles, this should be the next recipe on your list (even if you have, try this). They are the perfect combination of a light buttery cookie with a cinnamon-sugar coating.

You know how sometimes you read a cookie title that includes "fat" or "big", and your cookies turn out flat and weird? oh come, I'm sure I am not the only one. This is why I am always suspicious of new recipes. Luckily in this case the title and results match! The cookies are very addicting, so be careful.

Poppy Seed Bundt Cake

So this is actually the first time I have ever used poppy seeds in a dessert. I will admit I was pleasantly surprised! The actual cake is a moist delicious yellow cake, but the poppy seeds give it a really unique flavor - but not in a overwhelming way.

I have say that I am feeling a little more open minded lately. I use to completely reject recipes that had a unusaul ingredient, but now I am curious. I think this is a good thing, Or it might be a bad thing... I may have some baking traumas coming my way, but isn't that how you learn?

Oreo Fudge Bars

Awww Oreos, So much you can do with these delicious cookies.

I don't think I know anybody who doesn't like oreos. I think they are pretty much the only thing that is universally agreed on - oreos are yummy. Maybe if there was a plate of oreos in every peace talk, the middle east won't be so angry.

Hey, I should pitch this idea to the government!

Anyway... The bars are so good I actually said "uh oh" when I tried one, because I knew I was about to eat way too many. Whats not to love? A Oreo crumb base topped with chocolate fudge and finished with chocolate chips and Oreo pieces (lets not forget the white chocolate drizzle!).

The recipe calls to eat them cold, but a actually prefer them in between fridge temperature and room temperature, because they become a gooey delight.

Mini Chocolate Chocolate Cupcakes

Photobucket

I sure needed something chocolate, and so did my sister. I decided it would be fun if we baked cupcakes together, you know, some bonding time. I opened my cookbook cabinet, and spotted The Essence Of Chocolate, which I haven't looked at in months. This is a shame because not only is it a book with ONLY chocolate recipes, but it has beautiful pictures and lots of info - I recommend purchasing it.

Anyway, cupcakes were on our mind, so the title "chocolate chocolate cupcakes" sounded good enough. After a couple of minutes my sister sat down for a break, and I ended up doing all the work. I could complain, but honestly I didn't mind. I love baking, so obviously baking is not a chore for me, plus she did sing to me!

I bought these cute little mini cups, so I went for mini cupcakes. It is a good thing I did, because they were the perfect size for such intense chocolate (especially because I frosted them very, very generously). The thing I love most about the cupcakes is the frosting. Well actually it is pretty much just a simple ganache, which I found very refreshing. Because the cupcakes are topped with a ganache they are not sweet. So If you are looking for a dark chocolate fix, this is for you!

Brown Butter Corn Muffins

Yup. Brown butter is the best.

I have mentioned before my love for the burnt goodness, and I am ready to declare it again.

I've been meaning to make these muffins for weeks now, and every time I looked at my bookmarks, I told myself this week I'll do it. But of course, life and other pushy recipes got in the way.

Finally, their turn came and YUMMY. I love the crunchiness the cornmeal gives, and the honey glaze gives it a sweet sticky flavor.

Triple Chocolate Chip Cookies

I've being baking regularly for about 3 years now, and I now truly understand how important it is to use high quality ingredients. Here most supermarkets don't carry really good chocolate chips. You can easily be mistaken and buy some chocolate-flavored-chips-crap. You can be sure that when the word "flavored" is used, it most likely will not be good.

A lot of people complain that they don't bake because it never turns out good, but I bet half of the problem may be the quality...

With this on my mind I bought dark chocolate chips, milk chocolate chips and white chocolate chips, for a cookie that will be out of this world. This cookie embraces all chocolates in a combination that is to die for! I used one of my favorite chocolate chip cookie recipes (browned butter chocolate chip cookies), and man are the cookies bursting with flavor.

You can never have too many chocolate chips, right?

Peanut Butter Sandwich Cookies With White Chocolate Cream Filling

I recently signed up for an Israeli cooking magazine, and I couldn't be happier. I love reading it and looking at the mouth-watering (and inspiring!) photographs. Yesterday was the first time I baked something from the magazine - and not just anything...  peanut butter sandwich cookies! YUMMY. It was really love at first sight, and I knew I had to make the cookies right away.

Let me warn you the cookies are delicious on their own, but the white chocolate cream was to die for. And putting them together was like magic. I was eating the filling one spoonful at a time (hey, I had some left). I thought it would be fun to swap the white chocolate for dark chocolate in half of the cookies. Though the dark chocolate cream is also good, it doesn't compare to the glorious white chocolate cream.

The recipe does have some chilling time, so read the recipe before you start (which I did not - oops) and plan ahead.

Chocolate-Chocolate Chunk Muffins

Well, I haven't made muffins in a really long time. When I personally think of muffins, chocolate is not a main ingredient, but believe me these are muffins. They have that beautiful cracked top and they really aren't so sweet - with only 2/3 cup of sugar. They are full of chocolate flavor, moist and the chocolate chunks are a great addition.

I actually had to explain to my sister that they are muffins and NOT cupcakes, after she complained about it not being sweet enough... Now can you believe my family has become so spoiled they dare complain about homemade baked goods? I know, it is ridiculous. The thing is it would be a very sad world if I had no one to bake for, not to mention I would suffer extreme weight gain!

I guess it is a win win situation...
